Sukiyabashi Jiro is a tiny sushi bar located in the basement of an office building that looks like any other Ginza high rise. However, one taste of the extraordinary fish hand-picked by the octogenarian proprietor, Jiro Ono, and you will see why this is one of two sushi restaurants that Michelin gave three stars. The experience is serene yet strict – eat the sushi within 10 seconds of it hitting the counter for best flavor, and the next course is served a minute and a half later. What really sets Jiro apart is the attention to detail. The rice is cooked perfectly (of course) and served at room temperature, but each piece of fish is served slightly cooler or warmer – to bring out the optimal flavor and mouth feel of each piece. If you are serious about sushi, this restaurant is worth the price. Best to bring a Japanese friend with you if you can afford it…
